eteaket Recipe: Yerba Mate Energy Balls

Kick start your healthy eating with these super simple and incredibly tasty Yerba Mate energy balls.

Make a huge batch and these will keep in the fridge for 2 weeks in an airtight container or freeze them until you need them. There is no baking involved and you only need a bowl so little washing up is needed! They are tasty and basically have no sugar in them thanks to the honey, fruit and a dash on vanilla. The best part is Yerba Mate is apparently high in energy..are you ready for an energy burst?

Gather 

2 tsp Yerba Mate (grind to a fine powder)

250g rolled oats

100g nut butter

1 tsp vanilla extract

1/4 tsp salt

1/4 tsp cinnamon

150g honey

2 tablespoons seeds, nuts and chopped fruit

 

 

Method

Blend all ingredients into a bowl and leave until fully incorporated.

If the mixture is too dry simply add some more nut butter. If it is too wet add more oats.

Refrigerate for 30 minutes and then take out to roll.

Makes around 24 balls
