Mighty Matcha Sweet Potato Brownies

Mighty Matcha Sweet Potato Brownies
These Brownies are fabulous as not only do they taste fabulous they are Gluten Free, Dairy Free and Sugar Free!

1 tsp Mighty Matcha
100g Soya Spread
200g Raw chocolate ( conscious chocolate do a fabulous range)
200g baked sweet potato
125g Xylitol (Total Sweet)
2 eggs
150g Gluten Free plain flour (can also use brown rice flour)
50g Ground Almonds
100g chopped walnuts

1. Line a 20cm square tray-bake tin with nonstick paper or foil, and heat the oven to 180C.
2. Melt the Soya spread in a saucepan, break up 100g of the raw chocolate and stir until that’s melted.
3. In a bowl, with an electric whisk beat the sweet potato flesh with the Xylito
4. Add butter and chocolate and beat.
5. Add the eggs and beat
6. Sift in the flour and mighty matcha and stir. Add the ground almond and mix until fully combined.
7. Fold in the walnuts and remaining broken up raw chocolate.
8. Pour the mixture into the tin and bake for about 20-25 minutes
9. Let it cool totally until you enjoy!
