What is Hojicha?
Hojicha (ほうじ茶) is a Japanese green tea that undergoes a unique roasting process. While most green teas like sencha or matcha are steamed, hojicha is roasted over charcoal, typically at high temperatures. This roasting transforms the tea leaves from green to a rich reddish-brown and imparts a warm, nutty flavour that sets it apart from other Japanese teas.
Technical Origins
Traditionally made from bancha (mature tea leaves), kukicha (twig tea), or even sencha, the leaves are roasted at around 200°C (392°F) and then quickly cooled. This process reduces caffeine content significantly while enhancing the aroma and flavour complexity.

How to Brew Powdered Hojicha
Brewing powdered hojicha is simple and similar to preparing matcha, but with its own unique twist. Here’s how to get the best flavour from 2 grams of hojicha powder:
Measure 2 grams of powdered hojicha into a bowl or cup.
- Add a few drops of cold water and stir to a smooth paste.
Heat water to around 80°C (just below boiling) like matcha, boiling water can burn it & make it bitter.
Add about 60-70ml of hot water to the powder.
Whisk vigorously with a bamboo whisk or a small electric frother until a smooth, foamy consistency forms.
Enjoy immediately, or lengthen with more hot water or steamed milk to make a latte.
The result is a toasty, creamy cup with less bitterness and a naturally sweet finish.

Salted Iced Maple Hojicha Latte
Gather:
60ml hot water (80°C)
160ml milk (dairy or plant-based)
1 tsp maple syrup
Pinch of sea salt
Ice cubes
Method:
As above, whisk hojicha powder with hot water until smooth.
Stir in maple syrup and sea salt.
Fill a glass with ice cubes and pour the mixture over.
Top with cold milk and stir gently.
